Ingredients:

  • 6 large eggs
  • 2 cups cottage cheese
  • 1 cup shredded cheddar (or your favorite cheese)
  • 1 cup chopped fresh spinach
  • 1 red bell pepper, diced (optional but recommended!)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • Butter or oil for greasing the pan

Step-by-Step Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×9 baking dish or line it with parchment paper.
  2. Whisk the eggs in a large bowl until fully blended and slightly frothy .
  3. Add cottage cheese, shredded cheese, chopped spinach, and diced bell pepper to the bowl. Sprinkle in the salt, pepper, and garlic powder. Mix until well combined.
  4. Pour the mixture evenly into your prepared baking dish. Use a spatula to level the top for even baking.
  5. Bake for 35–40 minutes, or until the center is set and the top is golden brown . A toothpick inserted in the middle should come out clean.
  6. Cool for 5–10 minutes, then slice and serve warm! It also reheats beautifully for breakfast all week.
